Ice Cream Sunday

I have been wanting an ice cream maker for a while, and since Costco put their Cuisinart ice cream makers on sale for $23 recently, I got one.  (I think they are still on sale.  It's a good deal...Williams-Sonoma sells the same one for about 3 times that much).  We have started making ice cream every Sunday, and we love it!  I love this maker because it's clean and easy--no messy rock salt to deal with, and because it's fast--you can have fresh ice cream in about 30 minutes.  I make it in the morning and then put it in the freezer to thicken up a bit for later in the evening.

Last week we made Mint Chip, and it's our favorite so far.  Here's there recipe I used:


Ingredients

•2 cups 2% milk
•2 cups heavy cream
•1 cup sugar
•1/2 teaspoon salt
•1 teaspoon vanilla extract
•1 teaspoon peppermint extract (can substitute mint extract)
•3 drops green food coloring (optional)
•1 cup miniature semisweet chocolate chips

Instructions

1.In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
2.Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.
