Apple Hill

This weekend we went to Folsom to visit my parents and see my new niece that was born last month. It was a quick trip, but we had lots of fun. On Saturday we spent most of the day at Apple Hill. It's apple farm country in Placerville, stocked with pumpkin patches, fishing holes, hay rides, fall produce and crafts, etc.

This pumpkin weighed over 1100 lbs!....

Here is what I plan to do with the apples we got:

Aunt Linda's Apple Pie

Crust:
1 1/2 cups flour
1/2 cup vegetable oil
1 1/2 tsp. sugar
1 tsp. salt
2 Tbsp. cold milk

Filling:
4-6 cups peeled, sliced Granny Smith apples (or your favorite variety)
1/2 cup sugar
2 Tbsp. flour
1 tsp. cinnamon
1 1/2 tsp. nutmeg

Topping:
1/2 cup flour
1/2 cup sugar
1/2 cup butter

Directions:
Heat oven to 350 degrees. Combine crust ingredients. Mixture will be crumbly. Press dough into pie plate. Combine filling ingredients, pour into prepared crust. Combine topping ingredients by cutting butter into the flour and sugar. Mixture will be very crumbly. Sprinkle over apple filling. Place pie inside a brown paper grocery bag and staple the edge shut. Bake at 350 for 90 minutes.

I love this recipe because it is both easy and delicious. No messy dough rolling, you just press it right into the pie dish. I love the smell of a baking apple pie, almost as much as eating it!

Hope you are all enjoying your Fall.

I love Apple Hill, too! I went to this apple picking farm here in Virginia, and all they had were apples, no yummy apple treats, no hayrides, no fishing hole. Lame, seriously. That apple pie recipe looks so good, though. I think I'm gonna go make one right now. I'm not exaggerating. I really am going to do it right now :) Your girls are adorable! I hope I can see you soon!
