A fun day

Thanks to the Veterans yesterday, my kids had the day off from school. Ganon worked, so the kids and I had a girls-day-in. We stayed in our pajamas all day long (with the exception of a few princess/ballerina dress up sessions). We made breakfast, played, cozied up on the couch and watched the Tinkerbell movie we had rented, played some more, etc.

Just for fun, after lunch we made a yummy fall dessert (recipe follows). To be honest, the kids weren't that thrilled with the outcome because of the tartness of the cranberries (Fortunately they had Halloween candy as a back-up treat). But personally, I love the cranberry tartness with the sweet, buttery sauce. Yum! The recipe comes from Ganon's Aunt Ellen.



I made a half batch in an 8x8 pan. Here's the whole recipe:


Cranberry Cake:

1 Tablespoon margarine or butter

1 cup sugar

1 cup milk

2 cups flour

1 Tablespoon baking powder

3 cups raw whole cranberries (1 bag), rinsed and drained

Cream margarine and sugar. Add milk. Mix flour & baking powder, then add to sugar mixture. Fold in cranberries. Bake in greased 9x13 pan at 350 degrees for 25-30 minutes or until top starts to turn golden.

Sauce: (this makes a lot, probably more than you need)

2 squares of margarine or butter

2 cups sugar

1 cup half & half OR evaporated milk

2 tsp. vanilla

Heat until sugar dissolves, but do not boil. Serve over warm or room temperature cake while sauce is warm.
